Brownie and Caramel Cookies

These brownie and caramel cookies are so, so, so, so good!

They are full of chocolatey goodness with little surprise pieces of caramel in them.

I made these cookies with a box of brownie mix. It doesn’t get much easier than that!

You only need a few ingredients to make these brownie and caramel cookies:

  • A box of brownie mix (I used an 18.3 oz. fudge brownie mix)
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 tablespoon water
  • 6 caramels

For the caramels I used Werther’s Original soft caramels. I cut each piece of caramel into small pieces, almost chocolate chip size.

You don’t want the caramel pieces to be too big.

To make the chocolate and caramel cookies I started by adding the brownie mix, eggs, vegetable oil and flour to a mixing bowl.

I used a hand-held mixer on medium speed to mix the ingredients together. It will be somewhat dry.

Once all of the ingredients were mixed together well I added the tablespoon of water, then used the mixer for another 20-30 seconds.

You can’t have brownie and caramel cookies without caramel, so next I added the caramel pieces.

After I added the caramel pieces I gently stirred it together with a spoon.

I rolled the brownie cookies into 1 1/2 inch balls and added them to a cookie sheet lined with parchment paper.

Of course the hardest part is waiting for the cookies to bake and cool, but it is so worth it!

Ingredients
  

  • 1 box brownie mix (The one I use is 18.3 oz.)
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 tablespoon water
  • 6 caramels, cut into small pieces

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl add the brownie mix, eggs, vegetable oil and flour. Use a hand-held mixer on medium speed until the ingredients are combined.
  • Add the water and use the mixer 20-30 more seconds until it is well combined.
  • Add the caramel pieces and stir together.
  • Line a cookie sheet with parchment paper. Roll batter into 1 1/2 inch balls and place on the cookie sheet. Leave 2 inches between each cookie.
  • Bake 11-12 minutes, until the center is cooked through.
  • Let cool 5 minutes. Enjoy!
