Ice Cream Bundt Cake

This ice cream cake is so cute! Guess what….it’s also easy to make!

I am definitely not a baker, but I keep trying. I have come to realize that I do my best work when it’s easy.

For this ice cream bundt cake I used a boxed cake mix. Like I said, I want to keep it easy. I chose a chocolate cake and for the ice cream I bought cookies and cream.

I made the cake mix according to the directions on the box. I sprayed a bundt pan with no-stick cooking spray and added the cake batter.

I baked the cake according to the directions on the box, which was 40 minutes.

Once the cake was done baking I let it cool all the way. I let it cool a little over an hour. During the last 30 minutes I took my ice cream out of the freezer so it would soften.

I put a piece of parchment paper down on the counter, then I flipped over the bundt pan to get the cake out.

Next I had to cut the cake in half. I used a serrated knife to cut it.

After it was cut in half I carefully took the top half of the cake and placed it back in the bundt pan.

Now it was time to start adding the ice cream. I scooped out small pieces and went all the way around the pan. I used a 48 oz. tub of ice cream.

Once I had all of the ice cream in the pan I smoothed it out.

Once I was done with that I put the other half of the cake back in the pan.

I covered it with some aluminum foil and placed it in the freezer for 2 hours.

Then it was finally time to try my masterpiece! But first….I added chocolate syrup to the top of the cake.

It turned out so good!!!! Most importantly my kids LOVED it!

This ice cream cake looked pretty and tasted delicious. I will definitely be making this ice cream bundt cake again.
